Cinnamon Apple Pork Chops

This recipe is my super simple and macro friendly rendition of one of my Grandpa's signature dishes!


Ingredients

  • 3 honey crisp apples (or any other favorite apple)

  • 40 oz. pork chops (about 5)

  • Quinoa

  • 2 tbsp. brown sugar or stevia based brown sugar substitute

  • 1tsp cinnamon

  • ½ tsp nutmeg

  • ½ tsp ground cloves

  • ½ tsp garlic powder

  • Salt and pepper

  • 2 tbsp. lemon juice


Directions

  1. Preheat oven to 320 degrees

  2. Cook quinoa by packaged directions

  3. Heat pan over stove lightly greased with cooking spray or a bit of olive oil

  4. Season pork chops on both sides lightly with ½ of cinnamon, garlic powder, salt, and pepper

  5. Once pan has become hot, add pork chops and sear both sides, move to baking dish and place in oven to keep warm

  6. Chop apples into thin slices, toss in brown sugar and spices

  7. Cook apples over the stove until tender.

  8. Pour apples and spread over pork chops.

  9. Serve pork over cooked quinoa (or rice if preferred)


Optional but excellent: you can add nuts such as walnuts or my favorite, pecans to the apples while cooking for an added nutty taste and a light crunch.
