Breakfast Burrito Meal Preps

These Burritos are a perfect bulk-prep breakfast to make mornings simple all week long!




Ingredients:

  • 12oz Turkey Bacon

  • 6 Eggs

  • 4oz Diced Green Chili (canned)

  • 6 Potatoes

  • 2 tablespoons olive oil

  • 1 pound Lean Turkey Sausage (I like to use Chorizo seasoned)

  • 8 Tortillas (we like to use x-treme fiber wraps but any flour (or gluten fee flour) tortilla will work)

  • optional: 2 cups cheddar cheese

Directions:

  1. preheat oven to 365

  2. Wash and dice potatoes, add olive oil and salt and pepper as preferred. stir to evenly season

  3. spray a 9x13 baking pan with non- stick cooking spray

  4. add potatoes

  5. bake to desired texture. Usually between 60-75 minutes depending on how soft you want them.

  6. While the potatoes are baking, place a large frying pan over medium high heat. add strips of turkey bacon

  7. fully cook each strip of bacon (about 2 minutes each side). Once done, set them aside and repeat with the rest.

  8. After all the bacon is cooked and set aside, keep the pan over medium heat. Add sausage to the pan. stir often until the sausage is fully cooked (internal temperature 165+)

  9. remove from heat

  10. transfer cooked sausage from the frying pan into a large mixing bowl

  11. in a separate bowl, beat eggs until combined

  12. return the frying pan to medium heat, ad the eggs.

  13. Stir consistently, scraping the cooked egg off the bottom of the pan.

  14. Once your eggs are scrambled and fully cooked, add them to the mixing bowl with the sausage.

  15. Chop the cooked bacon into bits (I like to use a pair of kitchen scissors but you can also use a knife and cutting board.

  16. add Bacon to the mixing bowl

  17. open diced chilis and add to the mixing bowl

  18. optional: add cheese to the mixing bowl

  19. Once your potatoes are fully cooked (They should be done or close to done at this point), add them to the mixing bowl

  20. Stir gently to combine

  21. place 8 tortillas on a clean surface

  22. evenly distribute the burrito filling mixture between the 8 tortillas

  23. Roll each burrito and then wrap it with a strip of wax paper or parchment paper

  24. place into an airtight container

  25. repeat with all 8 burritos
