Vegetable Spring Rolls with Spicy Peanut Sauce

  • 4 green onions

  • ½ cup shredded red cabbage

  • ½ cup rice noodles

  • rice paper sheets

  • ¼ cup shredded carrots

  • 1 red bell pepper

  • lettuce, spinach, or Collard leaves

  • ¼ cup peanut butter powder

  • 1 tablespoon soy sauce

  • 1 teaspoon minced garlic

  • 2 teaspoons sriracha

  1. boil rice noodles until thoroughly cooked

  2. drain and set aside

  3. chop bell pepper and green onion into thin strips

  4. shred red cabbage

  5. fill a large bowl with water

  6. dip rice paper into water and set on a cleaned counter, cutting board, or plate

  7. place one collard leaf (or other greens) on the center of the rice paper

  8. with clean hands, gather a small handful of rice noodles (about 8 or so noodles). Place the noodles in the center of the greens

  9. add a couple strips of green onion and bell pepper alongside the rice noodles

  10. add some shredded carrots

  11. pick up one side of the rice sheet and stretch it over top of your ingredients.

  12. Grab the opposite side and stretch it over top, creating a tight roll

  13. fold the other two edges over and tuck them all onto one side of the roll.

Peanut sauce:
  1. mix powdered peanut butter with soy sauce and water, stir until smooth

  2. add sriracha and garlic, stir to combine
