Homemade Tomato Soup

Tomato Soup and grilled cheese minus the can!



Ingredients:

  • 6 roma tomatoes

  • 1 clove garlic

  • 1 small yellow onion

  • 1 1/2 cups chicken broth

  • 1/3 cup plain geek yogurt

  • 1/4 cup tomato paste

  • 1/2 teaspoon thyme

  • 1 tablespoon dried basil

  • 1/4 teaspoon salt

  • 2 tablespoons corn starch

  • 1/4 cup water

Directions:

  1. Preheat oven to 400 degrees

  2. wash and quarter tomatoes. Place in an oven safe baking dish

  3. peel and slice onion. add to baking dish

  4. mince garlic. add to baking dish

  5. bake for 45 minutes

  6. add roasted vegetables to a food processor or blender. Process until smooth

  7. add to a large sauce pot over medium heat.

  8. bring to a boil

  9. add seasonings, tomato paste, and yogurt. Stir to combine

  10. return to a boil

  11. in a separate bowl, combine corn starch and water. Stir until smooth

  12. add to sauce pot. stir to combine

  13. simmer over medium heat until the soup reaches your desired thickness.
