Sweet Potato "Toast"

This is so great as a quick and easy, balanced snack! I like to prep my sweet potato slices as part of my weekly meal prep. This makes it easy to throw into the toaster or air fryer when I'm ready for a snack that will keep me going.




Directions:

  1. Wash and peel sweet potato.

  2. Slice lengthwise into 1/8 inch thick slices.

  3. Toast in toaster or air fryer until browned and soft all the way through. (you can also bake them at 365 degrees) cook time depends on size and starchiness of your potato. Just keep a close eye on them!

  4. Top with desired toppings.


My Favorite Toppings:


  • Peanut Butter Banana

    • Spread with peanut butter and top with slices of banana and a sprinkle of cinnamon


  • Yogurt Strawberry

    • spread your favorite yogurt over toasted potato and top with chopped strawberries or other fruit. Sprinkle with chia or hemp seeds.


  • Cottage Cheese and Dill

    • top with cottage cheese and sprinkle with a little dill weed
