Date Caramel Truffles

These little treats come together so quick and easy! Using dates and nut butter, these pack a hunger crushing punch as well as some (often much needed) energy.

Ingredients:
5 large pitted mejdol dates
1 cup water
2 tablespoons nut butter of choice (I like to use peanut or almond)
3 tablespoons almond flour
1 pinch of salt
1/2 c dark chocolate
Directions:
In a microwave safe bowl, add 1 cup water.
Microwave for 2 minutes.
Add dates and let sit for 1 minute.
With a fork or a pair of tongs, remove each date and place into a food processor or blender.
Add almond butter, coconut oil and almond flour to the food processor.
Pulse until a smooth mixture forms.
Add salt and process again.
line a baking sheet with was paper or parchment.
Scoop out 1/2 tablespoon size balls and lightly flatten them onto the paper.
Place into freezer for 5 minutes to cool.
Melt chocolate with 1 teaspoon coconut oil.
Stir until smooth.
Dip each caramel and place back onto lined baking sheet.
Chill or let sit until chocolate sets.
