Indian Butter Chicken

This Indian butter chicken is deceptively simple and makes a killer meal prep!

makes 5 servings


- 16oz chicken breast

- 1 can tomato sauce

- 1 cup plain Greek yogurt

- 1 1/2 cup quinoa

- 1 cup red lentils

- 2/3 cup cilantro

- 1 tbsp. Garam Masala

- 2 teaspoons turmeric

- 1/2 tsp red pepper

- 1/2 tsp pepper


  1. cut chicken into cubes and cook in large pan on the stove stirring occasionally.

  2. boil lentils and quinoa in separate pots, covered.

  3. In a bowl, mix yogurt, tomato sauce, and spices

  4. chop cilantro and set some aside for topping, add the rest into the bowl and mix

  5. when the chicken is cooked, add the sauce mixture to the pan.

  6. add cooked and drained lentils

  7. stir butter chicken together until fully incorporated.

  8. serve over cooked quinoa

  9. garnish with remaining cilantro and (optional) a sprinkle of shelled hemp hearts.
