Healthy Pumpkin Cookies

These cookies are super simple making them a perfect fall treat while fueling your body with whole grains, nutritious carbohydrates and mental satisfaction. They are dairy free with simple options to make them refined sugar and gluten free as well!




Ingredients:

  • 1 cup pumpkin puree

  • 1 cup gluten free flour (or regular wheat flour. I use gluten free flour in all my recipes!)

  • 2 bananas

  • 2 eggs

  • 1 teaspoon baking powder

  • ½ teaspoon baking soda

  • 1 teaspoon xanthum gum

  • 1 ½ tablespoon pumpkin spice

  • ½ cup oat flour

  • 1/2 cup chocolate chips (dairy free or to make this recipe refined sugar free as well, substitute with chopped nuts or cocoa nibs!)


Directions:

  1. preheat oven to 350 degrees in a large bowl, mash bananas

  2. add pumpkin puree and eggs. Stir to combine

  3. add flour, oat flour, baking powder, baking soda, xanthum gum and pumpkin spice. Stir to combine

  4. stir in chocolate chips, chopped nuts, or cocoa nibs

  5. scoop into even portions on a cookie sheet sprayed with non stick spray

  6. bake until browned (check the bottoms of the cookies to watch for browning and avoid burning) about 8 minutes
