Healthy Lemon Cake Balls



Ingredients:

  • 1 cup flour (or gluten free substitute)

  • 1/2 cup almond flour

  • 1 lemon

  • 2 tablespoons coconut oil melted

  • 1/4 cup honey

  • 1 cup plain greek yogurt

  • 2 eggs

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1/2-1 teaspoon lemon extract

  • 1/4 cup vanilla or lemon flavored yogurt

  • 1 cup white chocolate


Directions:

  1. preheat oven to 365 degrees

  2. In a large mixing bowl, combine flour, almond flour, baking powder, baking soda, and salt. stir to combine

  3. add zest and juice of 1 lemon

  4. add plain greek yogurt, eggs, coconut oil, and 1/2 to 1 teaspoon lemon extract to preference

  5. mix until smooth.

  6. spray a 9x5 bread pan with nonstick cooking spray

  7. pour batter into pan

  8. bake for about 20 minutes or until a toothpick comes out clean

  9. remove from oven and set aside to cool

  10. once cool, place into a food processor and process until evenly crumbled

  11. add 1/4 cup vanilla or lemon yogurt

  12. process or stir until a moldable dough forms

  13. scoop 1 tablespoon at a time and roll into a ball. place on a cookie sheet lined with parchment or wax paper

  14. repeat with remaining dough

  15. place in the freezer for 15 minutes

  16. melt white chocolate over a double boiler

  17. dip one lemon cake ball at a time and cover in melted chocolate. place back on the lined cookie sheet

  18. place tray back into the freezer until chocolate sets
