Healthy Lemon Cake Balls
Ingredients:
1 cup flour (or gluten free substitute)
1/2 cup almond flour
1 lemon
2 tablespoons coconut oil melted
1/4 cup honey
1 cup plain greek yogurt
2 eggs
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2-1 teaspoon lemon extract
1/4 cup vanilla or lemon flavored yogurt
1 cup white chocolate
Directions:
preheat oven to 365 degrees
In a large mixing bowl, combine flour, almond flour, baking powder, baking soda, and salt. stir to combine
add zest and juice of 1 lemon
add plain greek yogurt, eggs, coconut oil, and 1/2 to 1 teaspoon lemon extract to preference
mix until smooth.
spray a 9x5 bread pan with nonstick cooking spray
pour batter into pan
bake for about 20 minutes or until a toothpick comes out clean
remove from oven and set aside to cool
once cool, place into a food processor and process until evenly crumbled
add 1/4 cup vanilla or lemon yogurt
process or stir until a moldable dough forms
scoop 1 tablespoon at a time and roll into a ball. place on a cookie sheet lined with parchment or wax paper
repeat with remaining dough
place in the freezer for 15 minutes
melt white chocolate over a double boiler
dip one lemon cake ball at a time and cover in melted chocolate. place back on the lined cookie sheet
place tray back into the freezer until chocolate sets
