Healthy Orange Chicken

I love orange chicken but I don't love how much sugar it often contains. This recipe leaves me feeling much better than its mainstream counterpart without sacrificing flavor or satisfaction!



Ingredients:

  • 1 pound chicken

  • 2 eggs

  • 1/2 cup flour

  • 1/4 teaspoon baking powder

  • 1/2 cup cornstarch divided in half

  • 2 oranges

  • 2 tablespoons minced garlic

  • 2 tablespoons honey

  • 2 tablespoons sriracha

  • 6 tablespoons liquid aminos or soy sauce

  • 2 tablespoons worcestershire sauce

  • 1/4 cup cornstarch

  • 3 cups cooked rice

Directions:

  1. cut chicken into bite sized cubes

  2. in a large bowl, beat eggs

  3. in a separate bowl, combine baking powder. 1/4 cup cornstarch, and flour. whisk to combine

  4. add cubed chicken to beaten eggs, gently mix until the chicken is coated.

  5. remove pieces of egg covered chicken and place into bowl with flour mixture

  6. toss to cover chicken and repeat with remaining chicken.

  7. place chicken over medium heat in a large frying pan

  8. keep over heat, continuously stirring until meat has fully cooked

  9. remove from heat

  10. in a saucepan, combine zest and juice of both lemons

  11. 1 cup of water, worcestershire sauce, honey liquid aminos/soy sauce, garlic, and sriracha

  12. bring to a boil over medium-high heat

  13. in a separate bowl, combine 1/4 c cornstarch with 1/2 cup water. Whisk until smooth

  14. add cornstarch and water mixture to orange sauce

  15. stir continually over heat until the sauce resumes boiling and thickens

  16. pour sauce over cooked chicken

  17. stir until chicken is fully coated

  18. serve over rice
