Healthy Caramel Cookie Bars

These chewy caramel bars are just the right amount of sweet and salty!



Ingredients:

  • 1 1/2 almond flour

  • 1/2 cup oat flour

  • 1/2 cup gluten free flour substitute (or regular flour)

  • 1/4 cup honey

  • 1 egg

  • 1/4 teaspoon baking soda

  • 1/2 tablespoon + 1 teaspoon vanilla extract divided

  • 1 cup pitted dates

  • 2 tablespoons almond butter

  • 2 - 1/2 tablespoon portions of coconut oil

  • 1/2 cup dark chocolate chips


Directions:

  1. preheat oven to 350 degrees

  2. In a large mixing bowl, combine almond flour, oat flour, and gluten free flour with the baking soda, egg and honey. Stir to combine

  3. add 1 teaspoon vanilla extract, stir to combine. This should form a crumbly dough that holds together when pressed.

  4. spray a bread pan with non stick spray.

  5. press dough into the base of the pan and pat smooth

  6. bake for 13 minutes or until the edges begin to brown

  7. bring a small pot of water to a boil

  8. add pitted dates to water and let boil for 30 seconds

  9. drain water and place softened dates into a food processor

  10. add remaining vanilla extract, almond butter, and 1/2 tablespoon of coconut oil

  11. process until smooth

  12. spread overtop of your baked cookie base

  13. place in fridge to cool

  14. once your caramel topped cookie is cool, place chocolate chips into a microwave safe bowl with remaining coconut oil

  15. microwave for 1 minute and stir until smooth

  16. pour over caramel layer and spread to cover

  17. place in fridge to chill until chocolate is firm

  18. cut into small squares
