Granola Yogurt Cups


  • 2 cups rolled oats

  • 1/2 cup creamy peanut butter

  • 2 tablespoons honey

  • 1/4 cup egg whites


  1. preheat oven to 350 degrees

  2. In a large mixing bowl, combine oats, peanut butter and honey

  3. stir to combine. (this will form a crumbly texture)

  4. add egg whites 1 tablespoon at a time until a moldable dough forms (if needed, continue to add 1 tablespoon of water at a time)

  5. spoon oat mixture into a greased muffin tin (this recipe makes 8 granola cups)

  6. with clean hands, mold dough around the edges of each cup

  7. bake for 8-10 minutes

  8. set aside to cool

  9. remove from muffin tin

  10. spoon yogurt into granola cups and top with perfered fruit
