Blueberry Muffin Granola

two of my favorite breakfasts combined into one!


  • 1 cup rolled oats

  • 1 cup rice crispy cereal

  • 2 cups roasted cashews

  • 1 cup dried blueberries

  • 2 tablespoons chia seeds

  • 1/4 cup + 1 tablespoon honey

  • 3 tablespoons peanut or almond butter

  • 2 tablespoons coconut oil

  • 1/4 teaspoon salt


  1. Preheat oven to 325 degrees

  2. in a large mixing bowl, combine oats, cereal, blueberries, chia seeds and cashews

  3. in a separate, microwave sage bowl, combine coconut oil and peanut/almond butter. microwave for 1 minute to melt together. stir to combine

  4. add honey and salt to this melted mixture.

  5. pour over the oats and cereal mix

  6. gently stir to evenly coat your granola

  7. place into a 9x9 or 9x5 baking dish

  8. back for 20-25 minutes or until corners brown

  9. if you prefer a crunchier granola, stir ingredients and return to the oven every 7 minutes until evenly browned
