Fall Spiced Sausage Pasta

This pasta is my husbands current favorite dinner! It's a Cozy and high protein way to celebrate the best season which is of course, fall.



Ingredients:

  • 1/4 c tomato paste

  • 4 tablespoons low-fat cream cheese

  • 1/2 cup low-fat plain greek yogurt

  • 1 cup chicken broth

  • 2 teaspoons garlic salt

  • 1/2 teaspoon rosemary

  • 1 tsp dried basil

  • 2 teaspoons parsley (I like to use fresh parsley)

  • 1 small yellow onion

  • 1 pound lean turkey sausage

  • 250 grams chickpea pasta

  • 1 1/2 teaspoon tarragon

  • 1 teaspoon thyme

  • 1 tablespoon cornstarch

  • 2 tablespoons water

  • 1/2 teaspoon pepper

  • 1/4 cup nutritional yeast

Directions:

  1. fill a large pot with water, bring to a boil. Add chickpea pasta and boil until al-dente, drain and set aside

  2. dice onion, add sausage and onion into a large frying pan. cook until sausage is fully browned and onions are translucent.

  3. To cooked sausage, add tomato paste, chicken broth, yogurt and cream cheese.

  4. continue stirring until cream cheese melts and sauce is fully incorporated

  5. add all spices

  6. in a separate bowl, combine cornstarch and water. stir until smooth. add to frying pan. continue stirring as sauce thickens

  7. add nutritional yeast, stir to combine

  8. add pasta, stir to combine
