Easy Corn Salsa

A quick and easy side dish packed with micronutrients and so yummy!



Ingredients:

  • 1 red bell pepper

  • 1 small red onion

  • 1 can corn

  • 1 can black beans

  • 2 limes

  • 1 bunch of green onions (2/3 cup chopped)

  • 1 tablespoon minced garlic

  • 1/4 cup apple cider vinegar

  • 1 teaspoon cumin

  • 1 tablespoon garlic salt

  • 2 teaspoons chili powder

  • 2 tablespoons nutritional yeast (optional but recommended for protein, B vitamins, and flavor!)


Directions:

  1. Drain corn and black beans and add to a large mixing bowl/

  2. Dice red onion and bell pepper.

  3. Add diced onion and bell pepper to mixing bowl.

  4. Slice green onion and add to mixing bowl

  5. Zest both limes into mixing bowl.

  6. Add nutritional yeast to salsa mixture.

  7. Squeeze the juice from both limes over the salsa mixture

  8. Add apple cider vinegar, minced garlic, garlic salt, chili powder, and cumin.

  9. Stir until well combined and evenly seasoned.
