Creamy Italian Sausage Pasta

This meal whips up so quick and never disappoints. This is one of our families staple meals, especially in the fall. It also makes a great meal prep or as leftovers for lunch the next day, Full of protein and cozy spices.

Creamy Italian Sausage Pasta

Ingredients:

  • 1 pound lean Italian turkey sausage or your favorite Italian sausage (we prefer beef)

  • 1/4 c tomato paste

  • 4 tablespoons cream cheese (low fat or full fat works great and adds protein and a creamy texture)

  • 1/2 cup low-fat plain greek yogurt

  • 1 cup broth (chicken, beef or my favorite, bone)

  • 2 teaspoons garlic salt

  • 1/2 teaspoon rosemary

  • 1 tsp dried basil

  • 1 teaspoons dried parsley

  • 1 small yellow onion

  • 250 grams chickpea pasta (I like to use one box of the barilla brand, any shape)

  • 1 1/2 teaspoon tarragon

  • 1 teaspoon thyme

  • 1 tablespoon cornstarch

  • 2 tablespoons water

  • 1/2 teaspoon pepper

  • 1/4 cup nutritional yeast


Directions:

  1. Fill a large pot with water, bring to a boil. Add chickpea pasta and boil until cooked through.

  2. Drain and set aside.

  3. Dice onion, add sausage and onion into a large frying pan. cook until sausage is fully browned and onions are translucent.

  4. To cooked sausage, add tomato paste, chicken broth, yogurt and cream cheese.

  5. continue stirring until cream cheese melts and sauce is fully incorporated.

  6. Add all spices.

  7. In a separate bowl, combine cornstarch and water. stir until smooth. add to frying pan. continue stirring as sauce thickens

  8. Add nutritional yeast. stir to combine.

  9. Add pasta, stir to combine.
