Cranberry & Rosemary Baked Chicken

This might be my favorite recipe I've posted so far. I cannot emphasize enough how much I love this recipe and its absolutely beautiful as well. I love this for a cozy holiday meal and it is actually very simple to make.

  • 5 pounds chicken

  • 2 teaspoons ground sage

  • 2 teaspoons garlic powder

  • 1 teaspoon dried rosemary

  • 5 sprigs of fresh rosemary

  • 2 cups chopped celery

  • 1 large yellow onion

  • 2 tablespoons olive oil

  • 2 tablespoons apple cider vinegar

  • 2-3 lemons

  • 1 package fresh cranberries

  1. preheat oven to 375 degrees

  2. chop celery and scatter into a 9x13 baking dish

  3. chop onion into strips and scatter in pan with celery

  4. half each chicken breast and place into a large mixing bowl

  5. to the chicken add: sage, dried rosemary, garlic salt, olive oil, apple cider vinegar, and season with black pepper and salt. Mix to evenly season each chicken breast

  6. place seasoned chicken over top of celery and onion

  7. slice lemons into ¼ in thick slices

  8. place lemon slices on top of the chicken.

  9. Place fresh rosemary sprigs evenly spaced across pan

  10. bake for 30 minutes

  11. remove from oven and pour cranberries over top

  12. bake for 30 more minutes or until chicken is fully cooked
