Summer Zucchini Salad

This salad only has a few ingredients and packs a bright summery freshness! It is extremely low calorie and low in protein so I recommend it be paired with some healthy protein and fat.


- 1 Zucchini spiralized or grated

- 1 c halved cherry tomatoes

- 1/4 red onion diced

- 1 lemon

- 1/4 cup fresh parsley finely chopped

- 2 tbsp. apple cider vinegar

- 1 tbsp. minced garlic


  1. chop and prep all ingredients

  2. zest lemon

  3. add zucchini, tomatoes, lemon zest, parsley and onion to a large mixing bowl

  4. add garlic, apple cider vinegar, and juice from the lemon to the salad

  5. salt and pepper to taste
