Simple Shakshuka

This is one of my very favorite recipes! It's easier to make that it seems and absolutely delicious! It pairs perfectly with my high protein naan bread recipe.



Ingredients:

- 1 yellow onion

- 2 bell peppers (I prefer red or orange for this recipe)

- 1 28oz can crushed tomatoes (stew ready or whatever variety you prefer)

- 1 can tomato sauce

- 1/4 cup chopped cilantro

- 1/2 c edamame

- 1 tsp paprika

- Cayenne pepper to desired level of spice

- 2 tsp garlic powder

- 1 tbsp. minced garlic

- 1/2 tsp cumin

- 6 eggs


Directions:

  1. cut peppers and onions into thin long strips

  2. heat minced garlic in a pan

  3. add cut veggies into pan with garlic and cook until tender

  4. add spices to cooked veggies and stir

  5. add tomato's, tomato sauce, edamame, and cilantro to pan and cook on medium - low heat until mixture begins to thicken/reduce

  6. salt and pepper to taste

  7. using a spoon, form small wells for eggs

  8. crack eggs into formed wells

oven directions: move pan into heated oven (375 degrees F) and bake until egg whites are cooked and yolks are runny (8-12 minutes)


stovetop directions: place lid over pan and cook on low heat until egg whites are cooked but yolks remain runny.


optional: sprinkle with chopped cilantro and hemp hearts.


makes 6 servings


My family likes to eat this meal served with rice or quinoa as well as my protein naan bread.
