Peanut Butter Oatmeal Cookies (High Protein)

Ingredients:

  • 2 cups oats

  • 1 cup powdered peanut butter

  • 1/4 cup creamy peanut butter

  • 1/3 cup unsweetened applesauce

  • 6 egg whites (or 1/2 cup liquid egg whites)

  • 1/4 cup honey

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/4 cup chocolate chips (optional)

Directions:

  1. preheat oven to 350 degrees

  2. in a large mixing bowl, combine peanut butter, honey, egg whites, and applesauce. Stir until smooth

  3. add oats, stir to combine

  4. add powdered peanut butter, baking powder, and baking soda. stir to combine

  5. add chocolate chips, stir to combine

  6. line a baking sheet with parchment paper

  7. spoon 1-2 tablespoons of cookie dough for each cookie (they do not change shape or spread much in the oven. How you shape them at this point is how they will bake)

  8. bake for 12 minutes

  9. let cool and enjoy!
