Peanut Butter Banana Bites (toddler friendly)

Whole grains, high in protein, tasty and easy to eat. These are a perfect snack for kids or, as is my experience, munchy college kids.


Ingredients:

  • ½ c peanut butter

  • ¼ cup peanut butter powder (ex: PB2 or PBFit)

  • 2 bananas

  • 1 cup oat flour

  • 2 teaspoons cinnamon

  • 1 teaspoon baking powder


Directions:

  1. preheat oven to 350 degrees

  2. mash bananas into a smooth consistency

  3. add peanut butter, stir to combine

  4. add oat flour, powdered peanut butter, cinnamon, and baking powder, stir to combine

  5. let dough sit for 5 minutes (this allows the oat flour to soak up some of the moisture)

  6. scoop tablespoon size portions of dough and roll into a ball

  7. place bites on a cookie sheet evenly spread out (they will not spread or rise a lot so you can place them as close as 1/2 inch apart)

  8. using a fork, flatten dough balls slightly

  9. place in oven and bake for 7- 10 minutes or until bottoms begin to brown

  10. remove and let cool
