Peach Crumble Muffins

Peaches are definitely a top contender for my favorite fruit AND I love muffins. What could be better.


  • 1 peach

  • 1 eggs

  • 1 1/4 c flour (I use a gluten free substitute)

  • 1 teaspoon baking powder

  • 3/4 cup full fat vanilla greek yogurt

  • 1/4 cup sugar

  • 2 tablespoons coconut oil melted

  • 1 1/2 tablespoon honey

  • 1/3 cup oats

  • 1/3 cup almond flour

  • 1/3 cup oat flour


  1. preheat oven to 350 degrees

  2. in a large mixing bowl, combine yogurt, egg. Beat together until smooth

  3. add flour, sugar, and baking powder. Mix until combined

  4. in a separate bowl, combine 1/3 cup oat flour, almond flour, oats, honey, and melted coconut oil, stir to combine. This is your crumble mixture

  5. peel and dice 1 peach and add to oat crumble mixture. stir to gently combine

  6. place 6 large muffin liners into a muffin tin

  7. spoon about 1/2 cup of muffin batter into each liner

  8. cover each muffin with peach crumble mix

  9. bake for 20-25 minutes
