Papusas and Curtido (cabbage slaw)

This recipe is near and dear to my heart. I hope you enjoy it as much as I do.

Papusa Ingredients:
- 2 cups Ma Se Ca
- 2 cups water
- 1 can re-fried beans
- 2/3 cups mozzarella cheese
Curtido (cabbage slaw) Ingredients:
- 2 cup thinly sliced cabbage
- 1 cup shredded carrots
- 1 red onion
- 2/3 cup apple cider vinegar
- 2 tsp onion powder
- 1 tsp red pepper
- salt and pepper
- 1 bottle Salsa Roja or similar dressing
Papusa Directions:
add Ma Se Ca to mixing bowl
add water
mix until a dough forms
divide dough into egg sized portions
flatten dough in your palm, forming a round crater in the center
add beans and cheese into center and fold dough over to cover
roll filled dough into a ball
flatten the dough ball and place in a heated pan sprayed with cooking spray or greased with olive oil
cook for 1-2 min and flip, repeat on other side
continue process with the rest of the dough
Curtido Directions:
fill a pot with water and bring to a boil
thinly slice cabbage and place into a strainer in the sink
pour boiling water over cabbage to slightly soften
add cabbage into a large mixing bowl
add carrots
thinly slice red onion, add to cabbage and carrots
add salt, pepper, onion powder, and red pepper, pour apple cider vinegar into bowl
mix everything together
To assemble Papusas: place cooked papusas in serving dish, serve curtido directly on top drizzled with salsa roja.
