This is a super quick and easy recipe and packed with protein. Get creative and add fruits and veggies of your choosing to mix it up (ex. halved grapes, cherry tomatoes, etc).
- 2 cans Chicken
- 2 1/2 cups plain Greek yogurt
- 1 large apple
- 1/2 of a red onion
- 1/4 cup chopped fresh parsley
- 1 orange bell pepper
- 3 Celery stocks
- 1/3 c dill pickles
- 2 tbsp. lemon or lime juice
- 1tbsp garlic powder
- 1/2 tsp black pepper
- 1 tbsp. dill
add yogurt, lemon/lime juice, dill, parsley, garlic powder and black pepper to a large mixing bowl
drain canned chicken and add to bowl
dice red onion, bell pepper, and apple and add to bowl
slice celery and cut pickles into small pieces. Add to bowl.
mix all ingredients until well combined.
Serving suggestions: There are a lot of ways to serve this salad. It can be served as a lettuce wrap, as a salad sandwich or on a rice cake. I also like to serve it with small rice cake rounds and veggies (carrots, celery, cucumber) to dip.
