Lemon Chia Protein Muffins
These low calorie, high protein muffins are a fun and tasty snack or breakfast option featuring one of my favorite ingredients, chia seeds!

makes 18 muffins
Ingredients:
- 1 cup oats
- 3 egg whites
- 1 scoop vanilla protein powder
- 1 lemon
- 1 serving (170g) plain Greek yogurt (I used Fage 0%)
- 1 serving (113g) applesauce
- 1 tbsp. chia seeds
- 1 tsp baking powder
- 1/2 tsp baking soda
optional: Lemon extract, yellow food coloring
Directions:
preheat the oven to 350 degrees
place oats in a food processor or blender and pulse until it becomes a fine powder
zest lemon (this is done by cutting the lemon peel into fine pieces typically with a small cheese grater or a zesting tool)
combine oats and protein powder and add lemon zest
fold in yogurt, applesauce, egg whites, and juice from the lemon
once combined, add baking powder, baking soda, and chia seeds to the mixture. (extract and coloring can be added at this point as well)
scoop batter into lined muffin tin until 1/2-2/3 full
bake for 8 minutes (stay close by these muffins can cook quickly!)
allow to cool before serving
