Chocolate Birthday Cake

This week I am celebrating MacFITT's 1st birthday! It has been one year since I started my business and I have loved every bit of it. I am looking forward to many more years of healthy recipes and seeing my amazing clients reach their goals!




Cake Ingredients:
  • 1 1/2 cups oat flour

  • 1 cup almond flour

  • 1/4 cup coco powder

  • 1/4 cup honey

  • 2 eggs

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1 cup water

Directions:
  1. preheat oven to 365 degrees

  2. in a large mixing bowl, combine oat flour, almond flour, coco powder, baking powder and baking soda

  3. stir to combine

  4. add honey, eggs and water to mixture and stir until a batter forms

  5. spray a 9x9 pan or cake pan of choice with non stick cooking spray

  6. pour batter into pan and spread evenly

  7. bake for 18 minutes (this may be less depending on the pan you use, check it often)

  8. remove from oven and let fully cool


Frosting Ingredients:
  • 2 cups plain greek yogurt

  • 1/4 cup sugar free pudding mix

  • 1 squirt of lemon juice

  • 1/8 teaspoon salt

  • water as needed


Directions:
  1. combine pudding mix with 1/4 cup of water. whisk together until a gel forms

  2. fold in yogurt and let sit for 3 minutes to thicken

  3. add lemon juice and salt, mix

  4. add water 2 tablespoons at a time as needed to achieve desired thickness
