Healthy Almond Flour Sugar Cookies (& Protein Frosting)

This is my favorite treat right now! A tasty copycat lofthouse cookie that is gluten free and free of refined sugar. I'm a sucker for a soft baked sugar cookie protein icing to top it off is even better. This icing is high in protein and colored using freeze dried strawberries rather than artificial dyes!



Cookie Ingredients:

  • 1 1/2 almond flour

  • 1/2 cup oat flour

  • 1/2 cup gluten free flour substitute (or regular flour)

  • 1/2 cup honey

  • 1 egg

  • 1/4 teaspoon baking soda

  • 1 teaspoon vanilla extract

Frosting Ingredients:

  • 1/2 cup freeze dried strawberries

  • 2 teaspoons dried milk (I used coconut milk powder but you can substitute oat or soy milk powder)

  • 4 oz greek yogurt (dairy or dairy free)

  • 1 scoop vanilla protein powder

  • 2 tablespoons sugar free jello mix or 1 tablespoon gelatin powder


Directions:

  1. preheat oven to 350 degrees

  2. in a mixing bowl, combine almond flour, oat flour, and flour

  3. mix in honey and 1 egg

  4. add vanilla and baking soda. Mix until well combined and dough forms a ball (if the dough is too loose, add more flour until it forms a moldable ball of cookie dough

  5. roll out dough on a clean counter dusted with flour (roll about 1/5 of an inch thick)

  6. cut dough and place on a baking sheet sprayed with non stick spray

  7. bake for 8-10 minutes or until the bottoms are browned

Frosting Directions:

  1. place freeze dried strawberries into a food processor

  2. process until a fine powder is formed

  3. add protein powder and milk powder

  4. process again until mixture is an even texture

  5. and yogurt

  6. process until well mixed and smooth

  7. add gelatin or jello mix

  8. process until smooth
