Health Gingerbread Cookies (Almond Flour)

A healthy and (optional) gluten free way to enjoy the Christmas season!


  • 1 1/2 almond flour

  • 1 cup gluten free flour substitute (or regular flour)

  • 1/2 cup honey

  • 1 egg

  • 1/4 teaspoon baking soda

  • 1 teaspoon vanilla extract

  • 2 tablespoons molasses

  • 1 1/2 teaspoon ginger

  • 2 teaspoons cinnamon

  • 1 tablespoon brown sugar


  1. preheat oven to 350 degrees

  2. in a mixing bowl, combine almond flour, and flour

  3. mix in honey, molasses, brown sugar, and 1 egg

  4. add vanilla, baking soda, ginger and cinnamon. Mix until well combined and dough forms a ball (if the dough is too loose, add more flour until it forms a moldable ball of cookie dough

  5. roll out dough on a clean counter dusted with flour (roll about 1/5 of an inch thick)

  6. cut dough and place on a baking sheet sprayed with non stick spray

  7. bake for 8-10 minutes or until the bottoms are browned
