Gingerbread Oatmeal Pancakes

A fun way to kick of Christmas morning in a way that nourishes your body and your holiday spirit!

  • 1 cup oat flour

  • 1 cup flour

  • 1 cup almond milk

  • 2 eggs

  • ¼ cup molasses

  • 1 teaspoon baking powder

  • ½ teaspoon baking soda

  • 1 teaspoon nutmeg

  • 2 ½ teaspoon cinnamon

  • 2 ½ teaspoon ginger

  • ½ teaspoon cloves

  1. combine oat flour, flour, baking powder, and baking soda, mix until combined

  2. add eggs, molasses, almond milk, and spices to pancake batter, stir to combine

  3. pour batter into a gallon sized freezer bag, seal the bag and snip about 1 cm off of one corner

  4. squeeze batter onto a frying pan in the shape of a ginger bread man

  5. cook about 1 minute or until bottom is browned, flip and cook other side

  6. repeat with the rest of the batter

  7. serve with maple syrup or, my preference, with fruit and yogurt

note: You can also scoop ¼ cup of pancake batter onto the pan at a time like a regular pancake
