Gingerbread Oatmeal Pancakes
A fun way to kick of Christmas morning in a way that nourishes your body and your holiday spirit!

Ingredients
1 cup oat flour
1 cup flour
1 cup almond milk
2 eggs
¼ cup molasses
1 teaspoon baking powder
½ teaspoon baking soda
1 teaspoon nutmeg
2 ½ teaspoon cinnamon
2 ½ teaspoon ginger
½ teaspoon cloves
Directions:
combine oat flour, flour, baking powder, and baking soda, mix until combined
add eggs, molasses, almond milk, and spices to pancake batter, stir to combine
pour batter into a gallon sized freezer bag, seal the bag and snip about 1 cm off of one corner
squeeze batter onto a frying pan in the shape of a ginger bread man
cook about 1 minute or until bottom is browned, flip and cook other side
repeat with the rest of the batter
serve with maple syrup or, my preference, with fruit and yogurt
note: You can also scoop ¼ cup of pancake batter onto the pan at a time like a regular pancake
