Fruit & Coconut Spring Rolls

Summer is ending but I had to get in at least one more summery and fresh fruit recipe! These spring rolls have only a few ingredients, are easier than then they look to make, and such a fun sweet snack! Feel free to add in your favorite fruits and make them your own.




Ingredients:

  • 1 cup uncooked quinoa

  • 1 can coconut milk

  • ¼ cup shredded coconut flakes

  • 2 cups sliced strawberries

  • 2 kiwis

  • 1 mango

  • spring roll rice paper


Directions:

  1. in a small pot, add 1 cup of quinoa and 1 can of coconut milk (I used lite coconut milk but you can choose based on your own preference). Cover with a lid

  2. simmer on low heat until the coconut milk is absorbed and the quinoa is soft. (15-20 min)

  3. remove from heat and stir in coconut flakes

  4. wash and slice strawberries. Peel and slice mango. Peel and half each kiwi and cut halves into slices.

  5. pour a bit of water onto a plate, dip 1 rice paper into water, flip and remove from water.

  6. lay onto prepared surface (clean counter, board, or plate)

  7. lay slices of kiwi and strawberry in an alternating pattern vertically up the rice paper. Lay mango strips next to or on top of other fruit

  8. gently scoop 2-3 spoonful's of quinoa on top of the fruit

  9. By this point, the rice paper should have absorbed a lot of water and become soft and transparent, lift the top edge of the paper up and lay it across the fruit and quinoa

  10. Repeat with the bottom edge lifting it up snug against the fruit and quinoa

  11. lift either the left or right edge of the rice sheet and wrap it snug against the spring roll,

  12. roll to meet the other edge to create a tight roll.

  13. (Optional) sprinkle with coconut flakes and/or chia seeds.
