Frozen Yogurt & Tofu Bites
Adding tofu to smoothies is somewhat uncommon and overlooked. It adds a smooth texture and a boost of vegan protein! I love this fun smoothie hack so I wanted to see how it would do when added to a fun frozen treat. I think it is safe to say it was a definite success! This is very customizable so feel free to add whatever fruit you like and make it your own!

Peanut Butter Banana Frozen Yogurt Bites
Ingredients:
1/2 cup rolled oats
2 tablespoons nut butter
1 frozen banana
1/2 pound (1 package) Firm Tofu
1 1/2 c vanilla Greek Yogurt
1/4 cup powdered peanut butter (ex: PBFit)
Directions:
in a small bowl, mix oats and nut butter until well combined
spoon mixture into the base of each cup in a mini muffin tin or into the base of mini cupcake liners (I recommend a mini muffin tin)
In a blender, combine tofu, banana, Greek yogurt, and peanut butter powder
blend until smooth
spoon mixture over oat mixture in each cup or, pour yogurt mix into a gallon size Ziploc bag, snip the end of one corner, and squeeze yogurt into each cup
optional: I chose to place a thin slice of a fresh banana on top of each cup and sprinkle with cocoa nibs
Freeze for an hour
Peaches and Cream Frozen Yogurt Bites
Ingredients:
1/2 cup rolled oats
2 tablespoons nut butter
2 cups frozen peach slices
1/2 pound (1 package) Firm Tofu
1 1/2 c vanilla Greek Yogurt
Directions:
in a small bowl, mix oats and nut butter until well combined
spoon mixture into the base of each cup in a mini muffin tin or into the base of mini cupcake liners (I recommend a mini muffin tin)
In a blender, combine tofu, peaches and Greek yogurt
blend until smooth
spoon mixture over oat mixture in each cup or, pour yogurt mix into a gallon size Ziploc bag, snip the end of one corner, and squeeze yogurt into each cup
optional: I chose to place pieces of a fresh cup peaches on top of each cup and sprinkle with hemp hearts
Freeze for an hour
