Cranberry Orange Scones

I love winter baking and these scones make that love a little more nutritionally fulfilling.


  • 1 egg

  • 2/3 cup oat flour

  • 1/3 cup almond flour

  • 2/3 cup flour or gluten free flour substitute

  • 2 tablespoons honey

  • 1/4 cup plain greek yogurt

  • zest and juice of 1 orange

  • 1/4 teaspoon baking soda

  • 1 teaspoon baking powder

  • 1 teaspoon cinnamon

  • 1/4 cup dried cranberries


  1. Preheat oven to 350 degrees

  2. In a large mixing bowl or stand mixer, combine oat flour, almond flour and four/gluten free substitute.

  3. add baking powder, baking soda and cinnamon. stir until fully combined

  4. add yogurt, honey, egg and cranberries. mix until a dough forms

  5. spray a baking sheet with non stick spray

  6. pat your dough into a flat circle about 3/4 inch tall

  7. cut into triangles and spread across pan

  8. bake for 15-20 minutes or until bottoms brown and corners become golden in color

  9. remove and allow to cool
