I love making baked oatmeal to prep my breakfasts for the week. There are so many fun and easy ways to make it interesting and tasty! This Valentine's Day inspired flavor is a perfect on the go breakfast and a great preworkout meal as well.
2 cups oats
1 cup almond flour
¼ cup + 2 tablespoons cocoa powder
2 scoops protein powder
1 teaspoon baking powder
½ teaspoon baking soda
2 tablespoons cocoa nibs
½ cup egg whites
1 cup water
1 cup chopped strawberries
preheat oven to 365 degrees
In a large bowl, add oats, almond flour, cocoa powder, baking powder, baking soda, coco powder, and protein powder
add egg whites and water (a little at a time, different protein powders will absorb more or less)
mix together until well combined
add cocoa nibs, fold into batter
wash and chop strawberries, fold into batter
spray a 9x9 dish with cooking spray
pour batter into dish and spread out evenly
(optional) add slices of strawberries on top of oats before baking
bake about 20 minutes or until cooked through (It may be soft still but will set up as it cools)
let cool, and serve with milk, almond milk, yogurt, or all on it’s own!
I like to cut my baked oats into even portions and save for my breakfasts for the week!
