Chili Mango Chicken Bowls

The perfect combo of spicy, sweet, and tangy! This recipe serves as an impressive and satisfying meal or a great way to spice up your meal preps.


  • 2-3 pounds chicken breast

  • 2 small avocados

  • 3 mangos

  • 1 cucumber

  • 1 small red onion

  • 2 tablespoons olive oil

  • 1 tablespoon apple cider vinegar

  • 2 teaspoons chili powder

  • 1/2 teaspoon pepper

  • 1 teaspoon salt

  • 2 limes

  • 1-2 tablespoons sriracha (add more or less based on how spicy you want it)

  • 4 cups cooked rice


  1. preheat oven to 365 degrees

  2. half each chicken breast and place on a baking sheet or in a 9 by 13 pan

  3. in a small bowl, combine oil, vinegar, salt, pepper, sriracha, chili powder and the zest of both limes (save your limes! you will use the juice!)

  4. brush each chicken breast with your oil and vinegar mixture

  5. bake chicken for about 45 minutes or until the internal temperature reaches 165 (aka . the chicken is fully cooked)

  6. dice 1 mango, 2 avocados, cucumber and red onion and mix together in a bowl

  7. squeeze the juice of both limes and stir until evenly mixed. set aside

  8. peel and core your remaining mangos and puree using a food processor or blender

  9. to serve, top rice with chicken and mango salsa mixture. spoon mango puree over top and (optional) drizzle with a small amount of sriracha.
