Chickpea Cookie Dough (and Cookies)


  • 1 can chickpeas

  • 1 tbsp. peanut butter

  • 3 dried apricots or 1 medjool date

  • 1 scoop protein

  • 1tsp vanilla

  • ½ tsp almond extract

  • 3 tbsp. coconut flour

  • 1 bar dark chocolate or 2/3c choc chips

  • 2 tbsp. brown sugar or brown sugar substitute (stevia)


  1. Add date or apricots to a food processor or blender with a tablespoon of warm water, process until smooth

  2. Drain and rinse chickpeas, place in food processor

  3. Add vanilla extract, almond extract, peanut butter

  4. Blend until a smooth texture

  5. Add coconut four, brown sugar and protein powder and process again

  6. Remove dough from food processor and stir in chocolate

To make cookies:

  • Add 1 egg, 1 teaspoon baking powder, ½ teaspoon baking soda and a tablespoon or two more of coconut flour and cook for about 7 minutes at 350 degrees.
