Cauliflower Fudge (dairy free option)
I love finding ways to use ingredients in unexpected ways. Not to mention that especially when it comes to kids, its never really a bad thing to find ways to incorporate veggies right? These are a fun little treat especially for those of us without such a big sweet tooth or maybe just want something a bit lighter.

Ingredients:
1 head of cauliflower
1 envelope gelatin
3 tbsp. sugar free chocolate pudding mix
2 tbsp. coco powder
1 cup chocolate chips (I used dairy free chocolate chips)
3 tbsp. nut butter
optional: Sprinkles, freeze dried fruit or cocoa nibs
Directions:
Steam cauliflower until tender
transfer steamed cauliflower into a blender
blend until smooth
add chocolate chips and blend until well combined (the heat from the steamed vegetables will melt the chocolate)
add nut butter, gelatin, pudding mix, and coco powder into blender
blend until combined
pour into a 9 inch baking dish or silicone molds
optional: sprinkle with colorful sprinkles, freeze dried fruit, or cocoa nibs
refrigerate or place into freezer until fudge sets and is able to hold its shape
cut fudge into inch sized cubes
keep frigerated.
