Baked Apples

Perfect for Thanksgiving or a fun fall treat! The pie crust top is optional but so cute!


Ingredients:

  • 4 apples (I love Granny Smith, Honeycrisp, or Fuji)

  • 1 cup rolled oats

  • ½ cup pecans or walnuts

  • 1 tablespoon cinnamon

  • 2 teaspoons allspice

  • 3 tablespoons honey

optional:

  • Pie crust dough of choice

Apple Directions:

  1. preheat oven to 350 degrees

  2. wash and dry apples

  3. cut top off of each apple and scoop out the inside of each fruit. Don't scoop too deep or your apples will collapse while baking (leave about ½ inch of fruit in the base of the apple)

  4. discard the seeds and place the scooped out apple into a mixing bowl

  5. to this bowl, add oats, pecans, cinnamon, allspice, and honey. Stir to combine

  6. spoon this mixture back into hollowed out apples

  7. place apples into a 9x9 pan or onto a baking sheet


You can bake the apples at this point if you prefer a crust-less version of this recipe! See baking instructions below


Crust Directions:

  1. cover the top of each apple with pie crust dough

  2. remove excess crust dough and add a coil of dough around the edges

  3. pinch segments together with fingers to form the pie crust wave pattern

  4. cut little pieces out of the top

  5. in a bowl, beat 1 egg

  6. using a pastry brush, egg wash (brush slightly beaten egg) the top of each “pie”


Baking Directions:

  1. cover the apples in a sheet of aluminum foil (I like to “tent” it so that it does not touch apples. lightly spray the foil with cooking spray. This will prevent it from browning to quickly and reduce the risk of the crust sticking to the foil and getting broken)

  2. bake for 30 minutes

  3. remove foil and bake 15-25 more minutes or until crusts brown and the apples are softened thoroughly.
