Avocado Toast (with Calorie/Macro Hack)

Everyone loves avocado toast! With this easy hack you can enjoy it with more protein and less calories!

Makes 2 servings

  • two pieces of bread

  • 2 eggs

  • 1/2 of an avocado

  • 1/3 cup low-fat cottage cheese

  • 1 lime

  • 1/2 teaspoon salt

  • 1 small tomato

Optional but delicious ad ons:

  • thinly sliced red onion

  • balsamic vinegar

  1. place avocado and cottage cheese together in a bowl

  2. using a fork, mash avocado and cottage cheese together until well combined

  3. add salt and the juice of 1/2 of a lime, stir

  4. toast bread

  5. thinly slice tomato

  6. heat a frying pan over medium-high heat, spray with non stick spray

  7. crack eggs onto pan and sprinkle with black pepper

  8. let the whites cook until they are strong enough to flip

  9. flip the eggs over and cook until whites are cooked but yolk is still soft

  10. spoon avocado/cottage cheese mix unto toasted bread and spread to the edges

  11. place sliced tomato on top

  12. using a spatula, gently place 1 egg on each toast
